LACTO FERMENTATION BASICS: SAUERKRAUT

How does the mix of microbiology and culinary arts create the flavorful world of fermented foods? Discover the wonders of lacto-fermentation basics through the lens of sauerkraut! Learn all about home fermentation basics, how our health benefits from lacto-fermented foods, the history of cabbage as a beloved winter vegetable, and how to take lacto-fermentation into your own hands and safely play with this delicious and healthy practice in your own home kitchen!


In this class, students will process cabbages into sauerkraut, learn different styles of culinary preparation and cultural ways of preparing this dish. We will go over the basic microbiology of lacto-fermentation, the tools and materials required (many of which you already have in your kitchen!), and introduce how to expand your skills into the world of fermentation and creative culinary adventure.

Class Details

Age Requirement: this class is for adults and youth 14-17 if their parent or guardian is also registered for the class.


Location: TBD


Students bring: a 16 oz mason or ball jar, cutting board, sharp big knife to cut cabbages (wrapped safely please!).


Tuition: $50

Materials fee: $15
